Yellow Pepper & Apricot Chutney with almonds and whisky
This chutney was developed as an accompaniment to liven up the Christmas leftovers namely the large leg of ham that still remained after the visitors had gone home. This chutney is also delicious with a mature hard cheese such as Cheddar.
Like the red capsicums in the Red Pepper Marmalade, the yellow capsicums are chargrilled and peeled before being used in the chutney.
