Bill's Beetroot Marmalade
This marmalade is named in grateful thanks to my loving husband Bill who not only peels and chops beetroot late into the night but who is also the world's best KP (kitchen porter). He does sink loads of washing up without a complaint!
We wanted to create a product that could be used with lots of different dishes to make them more exciting and tasty. This marmalade goes with just about everything. Some of our favourites are
- On top of oven poached Atlantic salmon and served with creamy mashed potato and a rocket salad
- Mixed with a spoonful of mayonnaise and added to a tin of tuna and red kidney beans for a quick and easy filling for wraps
- With pork chops instead of the traditional apple sauce
- Mix with a spoon of olive oil and toss through a rocket and goats curd cheese salad instead of salad dressing
